Fattoush Summer Salad

Ingredients
Salad
• 2 pitta bread
• 2 tsp Essential Zahtar Spice Mix
• 10-12 cherry tomatoes, halved
• ½ cucumber, deseeded and sliced
• 6 radishes, thinly sliced
• Roughly 10 sugar-snap peas or mange tout
• 2 spring onions
• Handful of fresh parsley - Picked
• A couple of sprigs of fresh mint - Picked
Dressing
• 1 tbsp Odysea Pomegranate Molasses
• 1 tsp Essential Sumac
• 4 tbsp Essential Extra Virgin Olive Oil
• ½ tsp Salt
Method
1. Chop pitta bread into small squares or triangles, toss in olive oil and a sprinkle of Zahtar seasoning and bake at 180°C for 10-15 minutes, or until golden and crisp, then leave to cool.
2. In the meantime, in a large bowl or platter, combine the prepared tomatoes, cucumber, radish, snap peas, spring onions, mint and parsley.
3. In a small bowl, whisk together the salad dressing ingredients and pour over the fresh salad.
4. Toss in the freshly baked crisp pitta breads and mix together, sprinkling some extra sumac to garnish.
