Mango Ice Lollies

These three ingredient ice lollies are the most refreshing summer cooler, they’re vegan, gluten free and so simple to make! Deliciously creamy from the coconut milk, with sweet Mango and sour frozen berries. The perfect treat to whip up on the next hot summer day!



Prep 5 mins | Freeze 4-6 hours | Serves 6 people 

Ingredients

• 2 tins Essential Mango Chunks in Juice
• 1 tin Essential Coconut Milk
• Frozen Raspberries or Blueberries


Method

1. Add two tins of tinned mango and juices into a blender along with one full can of coconut milk and blend  into a smooth consistency.

2. Pour into lolly moulds (or some small cups!) and place a wooden stick or spoon in the centre and freeze for a minimum of 4 -6 hours.

3. Dip the moulds briefly in hot water to release the lollies.
