Sanchi’s Mugi Miso is an authentic, dark-colored paste based on the traditional miso of rural Japan. Unlike lighter varieties, this barley miso is aged in cedar wooden kegs for a minimum of 18 months. This lengthy, natural fermentation process allows the flavors to mature, resulting in a rich, savory, and robust umami profile that is less sweet than rice-based misos.

Crafted from a simple blend of organic soybeans, barley, and sea salt, it is produced through live enzymatic fermentation. This makes it a "live" food, rich in beneficial enzymes and probiotics that are known to support digestive health. Because it is highly concentrated, it is very economical; just a small amount is needed to add a profound depth of flavor to hearty winter dishes, such as casseroles, gravies, and stews, or to create a classic, nourishing miso soup.

The 345g format typically comes in a resealable stand-up pouch, making it easy to store in the refrigerator after opening. It is a staple for macrobiotic, vegan, and vegetarian diets, providing a natural source of plant-based protein and essential minerals. Sanchi remains committed to traditional craftsmanship, ensuring this miso is free from MSG, artificial preservatives, and synthetic additives.
